
Hi readers, today we will start our first exploration with the north of China’s hand pulled noodles, You Po Mian.
This dish is comfort food for people of Shaanxi Province. It is located in the north of China. People here have a fever for noodles. They have hundreds of ways to prepare & cook them. People from Shaanxi can eat noodles for all 3 meals and still say ”
嘹咋咧! (Liao Za Lie) This is a saying to describe how they feel after they finish a good meal. Similar to saying “YUMMY!”
You Po Mian has a chewy, hand pulled noodle of various sizes, due to the pulling technique.
When Chinese people describe food, there are 3 factors. 1) Color 2) Aroma 3) Flavor
You Po Mian has a soft white/yellow noodle. The aroma is full of garlic and Szechuan Peppers that pop with the addition of the hot oil the chef adds. When you mix the noodles at your table, the aroma will get your appetite going. Your first bite will leave you numb but wanting more. The dish is slightly spicy and oily. Garlic and Szechuan pepper are the main flavors that coat the chewy noodles. Some vegetables are typically put in, but are not the star.
The best You Po Mian we have found in the Dallas/Fort Worth area is in Richardson. at
马师傅面馆(Ma Shi Fu Mian Guan) also known by the English name, Taiwan Cafe. WARNING! if you’re looking for Taiwanese food, this is not the place for you. The new owner has not changed the name to reflect his food. I guess he is too busy eating You Po Mian!
